- 1 cup (8 oz.) unsalted butter, at room temperature
- 1 cup confectioners’ sugar
- 1 large egg
- 2½ tsp. vanilla extract
- 1 vanilla bean, split lengthwise
- Zest of half a lemon (or the zest of a whole lemon, if you love lemon)
- 2½ cups all-purpose flour
- 1 tsp. salt
- preheat oven to 350 degrees
- In a large mixing bowl, cream together the butter and confectioners’ sugar on medium-high speed until smooth, 1-2 minutes.
- Beat in the egg, vanilla extract, seeds scraped from the vanilla bean, and lemon zest until blended.
- Mix in the flour and salt on low speed just until incorporated. Form the dough into a ball and wrap tightly with plastic wrap.
- Refrigerate until chilled and firm, at least 1-2 hours.
Icing Ingredients:
- 3 Tbsp Wilton meringue powder
- 4 cups confectioners sugar
- 5 Tbsp warm water
- Combine all ingredients until smooth
