Gluten Free, Dairy Free S'mores Cookies

Heeeey, hoooo! Just because I am 99.100% gluten free and dairy free (besides the occasional donut treat) doesn't mean I don't get mad cookie cravings at 8:00 at night! So, I took it upon myself to whip up a batch of GF, DF s'mores cookies. Hello YUM! Don't you just love it when a recipe you totally made up turns out to be perfection? I baked off a sheet of s'more-ish delights and then scooped the rest onto a baking sheet to freeze, bag, and label for future late night cookie cravings!
Kyla's GF DF S'mores Cookies-
Ingredients:
- 1 cup peanut butter
- 1 cup almond butter
- 2 cups sugar
- 2 eggs
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp vanilla
- 1/2 cup small marshmallows
- Justin's chocolate hazelnut butter (melted) for drizzling
- preheat oven to 350 degrees
- sift together sugar baking powder and baking soda
- cream almond butter, peanut butter, and sugar together in a stand mixer
- add vanilla and eggs and stir until combined
- fold in mini marshmallows
- line baking sheet with parchment
- scoop cookies onto sheet in rows with a small ice cream scoop
- drizzle chocolate hazelnut butter on top
- bake for 10 minutes... they will look a bit moist, let stand for a few minutes
- drizzle again with chocolate hazelnut butter
- EAT!
