GF DF Banana Muffies

 BAKE... EAT... REPEAT.

I am always looking for a great GF DF quick-bread recipe because it is one of my favorite things to have with my afternoon coffee. My momma used to make banana bread all the time and have it ready for us after school with whatever fresh local fruit she could find. It is tasty, comforting, filling, and has just the right amount of sweetness for a coffee pairing! The recipe below is my most recent find, and my FAVORITE by far thus far.





Ingredients:
  • 3 medium ripe bananas
  • 1/2 tsp pure vanilla extract
  • 1 egg
  • 3 Tbsp coconut oil, melted
  • 1/4 cup sugar
  • 1/4 cup packed brown sugar
  • 2 Tbsp honey
  • 3.5 tsp baking powder
  • 3/4 tsp sea salt
  • 1/2 tsp cinnamon
  • 3/4 cup unsweetened coconut milk
  • 1 1/4 cup almond meal
  • 1 1/4 cup gluten free flour blend
  • 1 1/4 cup gluten free oats
Instructions:
  • Preheat oven to 350 degrees F and line a muffin tin with paper liners.
  • Mash banana in a large bowl. 
  • Add all wet ingredients and whisk to combine. 
  • Last add all dry ingredients and stir.
  • Bake for about 37 min.or until golden brown and firm.
  • Enjoy!
