Christmas Cookies

A DASH OF THIS, A DASH OF THAT

I just don't think that there is anything quite as festive as a frosted sugar cookie. They are perfect for any holiday as they can be SO easily adapted to Valentines, Easter, etc with the simple swap of a cookie cutter! My mom and I made 4 dozen of these little pretties for each of us to take to all the parties we attended of Christmas Eve and Christmas Day... and of course a couple for Santa, because let's be real, Santa loves his cookies ;)!

My Favorite Sugar Cookie Recipe:
 Ingredients:
1 cup unsalted butter, at room temperature
     1 cup powdered sugar
     1 large egg
     2 1/2 tsp. vanilla extract
     1 vanilla bean, split lengthwise
the zest of half of a lemon
2 1/2 cups all purpose flour
     1 tsp salt

Instructions:
In a large mixing bowl, cream butter an sugar until smooth (1-2 minutes)
Beat in egg, vanilla, seeds of vanilla bean, and zest until bleded
Mix in flour and salt on low just until combined
Form dough into a disc and wrap with plastic wrap to chill for 2 hours
     Pre-heat oven to 375
     Link baking sheets with parchment
Roll out dough on a well floured surface to about 1/4 inch thickness
     Cut with desired cookie cutters
Bake 8-10 minutes, rotating sheets halfway through for even baking
Cool 5 minutes before transfering to a wire rack to finish cooling
Ice with Wilton recipe once completely cool.
