Bunny Sugar Cookies For All The Wins

  If I had to pick a favorite cookie, the iced sugar cookie would absolutely be it. There are so many fun and festive things that you can do with one recipe that I can not even stand it! These bunny cookies are by far the cutest Easter cookie I have made to date. There is no need to get all fancy on them, they are simple, adorable, and best of all DELICIOUS! Not a single one was left!

Cut Out Sugar Cookies-

Ingredients:
  • 1 cup (8 oz.) unsalted butter, at room temperature
  • 1 cup confectioners’ sugar
  • 1 large egg
  • 2½ tsp. vanilla extract
  • 1 vanilla bean, split lengthwise
  • Zest of half a lemon (or the zest of a whole lemon, if you love lemon)
  • 2½ cups all-purpose flour
  • 1 tsp. salt
Instructions:
  • preheat oven to 350 degrees
  • In a large mixing bowl, cream together the butter and confectioners’ sugar on medium-high speed until smooth, 1-2 minutes.  
  • Beat in the egg, vanilla extract, seeds scraped from the vanilla bean, and lemon zest until blended.  
  • Mix in the flour and salt on low speed just until incorporated.  Form the dough into a ball and wrap tightly with plastic wrap.  
  • Refrigerate until chilled and firm, at least 1-2 hours.

Icing Ingredients:
  • 3 Tbsp Wilton meringue powder
  • 4 cups confectioners sugar
  • 5 Tbsp warm water 
Icing Instructions:
  • Combine all ingredients until smooth
